Ginkgo biloba, also known as the maidenhair tree is known for its resilience and hardiness and is revered for its many medicinal uses. It is referred to as a living fossil because ginkgo biloba is the oldest species of plant known with no surviving close relatives. The fall gold ginkgo leaf has a sweet mellow herbal flavor that is most prized as a tea, made into tonics and extracts but not commonly used in cooking. They are harvested late in the season because the medicinal properties of the plant are believed to be at their strongest.
