Wheatgrass is the freshly sprouted shoots of young grass in the wheat family, also known as the “true” grasses. It is mildly sweet, light and pleasant tasting often used interchangeably with barley grass. Wheatgrass makes a healthful addition to smoothies, cooked cereals, soups, stews, vegetable dishes or it can be enjoyed on its own with water.
Wheatgrass contains more protein, vitamin E and phosphorus than either broccoli or spinach. This superfood not only contains protein it also is nutrient-rich with amino acids, fiber, minerals, and vitamins A, B6, C, E, and K. Wheatgrass provides a concentrated amount of chlorophyll, as well, and some claim its many healthy components support everything from detoxifying the liver to improving immune function.
