This gentle restorative herb has a lot going for it in terms of nutritional value. It provides significant amounts of soluble fiber, protein, vitamins, and minerals such as iron, calcium, magnesium. It is commonly used in shakes, and smoothies, tea blends, alone or in combination with other herbs.
