OVERVIEW:

Mace, technically called the arillus, is a spice made from the thin dried and ground leathery red outer covering of the nutmeg kernel belonging to an Indonesian tree. Nutmeg and mace can be used interchangeably but mace is lighter and lifts foods while nutmeg is a stronger flavor that enhances foods. Mace gives a combination of a cinnamon and pepper flavor adding a nice warmth and lemony sweetness to savory or sweet dishes. It is one of the few spices that can be added at the beginning of cooking to allow the flavor to bloom into the food.

 

Mace blades or Mace Whole are often used to add flavor to soups and stews and are suitable for adding to mulling spices or marinades. One blade of mace is supposed to be enough to flavor a meal of four to six portions. Like bay leaves, they are removed from the dish before serving. Ground mace is added in very small amounts to desserts and such savories as Swedish meatballs and barbecue sauce. It is a very popular ingredient in donuts. One teaspoon ground mace should equal one tablespoon mace blades.

 

Mace features a range of antioxidants, vitamins, minerals, and essential oils. Traditionally, it has been used as a remedy for numerous digestive complaints, as a mild sedative, and a boosts to blood circulation.

Keep your breath smelling fresh too just add a pinch of mace to your toothpaste before you brush your teeth.
