OVERVIEW:

Fennel is part of the celery family and the aromatic seeds are now used in cuisines around the world. Similar to anise or licorice, it has a warm

mildly sweet-smelling aroma and the flavor is slightly sweet with a camphorous undertone. Fennel seed has many culinary applications such as flavoring bread, cakes, and cookies, as well as cordials. This spice is used in cooking for poultry, sausage, pasta, barbequed food, soups, salads. vegetables, meats, soups, and stews. Add fennel at the end of the cooking process for the best flavor.

 

Due to fennel's gentle nature, it is believed to be a digestive aid and is given to infants, children, and even nursing mothers. The seed is commonly prepared as tea, which reputedly helps to settle an upset stomach and relieve gas. Fennel provides an enormous amount of health benefits, one being that it is rich in flavonoid antioxidants.
