OVERVIEW:
Chipotles are smoked jalapenos that are roasted over a wood fire for several days. This deep red powder is smoky and earthy, slightly spicy, and has a fruitiness reminiscent of raspberry jam. The peppers are considered to have a medium heat that can be used in any dish that needs a bit more fire or smoky spice added to the mix. It is traditionally used in Mexican and Southwestern cooking in everything from adobo, chili, barbeque, salsas, marinades but don't forget the vegetables and egg dishes.
